It seems that people have forgotten the Agni Kai with Zuko and Zhao... That would be one of my favorites, its got dynamic music, an awesome spin leg takedown by zuko, and it's our first real taste of firebending.

Aang Vs Zuko in 'Sozin's Comet Pt1 - The Phoenix King'

I loved the scene in the beach house when Zuko makes a tunnel of fire and bends it down the corridor after Aang, who 'airbend slices' through it, simply awesome.

One of my favorites was Katara vs. Pakku. I got a very good sense of Katara's power and awesome potential. Here she was, a self-taught beginner, holding her own against a master. I loved Toph's bending in "The Blind Bandit". She was totally awesome.

Also, while it didn't involve any bending, the little tussle between Aang and Hide ("The Headband") was pretty cool. Aang kicked butt without lifting a finger. Then again, the series was full of great non-bending moves...but that's a different topic.
Meh...you've seen nothin' once, you've seen it a thousand times.

The storming of the palace was def one of my favourites. It was just an epic pwnage while apologising.

My favourite would have to be the white lotus storming Ba Sing Se, mainly when Iroh is breathing fire while outside of the city and the flames are enlarging with each breath. Then the huge fireball. Gotta love it.

Yes i loved the build up on iroh's first attack. The breathing, the flames growing larger, the dragon ball Z sound effects to when he fires it....

From that moment onwards we saw superb bending everywhere, from iroh, Bumi, Azula Zuko aang and Ozai.
Everything was just amazing

I have tons.
Sozin's Comet pretty much pwn'd.
Everything.
Azula vs. Zuko
Azula vs. Katara
Aang vs. Ozai
Toph (and crew) vs. Fire Nation Soldiers

Those are the only bending sequences that were wow worthy that I can think of right now.
